Sichuan cuisine stands as one of the four great traditions of Chinese food, distinguished by its remarkable depth of flavor and the signature numbing sensation that comes from the masterful use of Sichuan peppercorns and chili peppers.[4] The origins of this culinary tradition trace back to the Qin and Han dynasties, with the cuisine gaining recognition as a distinct regional system during the Southern Song Dynasty (1127-1279), when Sichuan restaurants first opened in major cities.[1] What makes Sichuan cuisine particularly fascinating is its evolution in response to the humid climate of southwestern China’s Sichuan Province, a region blessed with fertile lands and agricultural diversity that has shaped its bold seasonings and distinctive cooking methods.[4][6]
At Ruiji Sichuan Cuisine, diners can expect to encounter the full spectrum of Sichuan flavors—hot, sweet, sour, salty, and the characteristic tongue-numbing sensation known as “mala.”[1] The restaurant’s menu draws from a culinary tradition that boasts over 5,000 documented dishes, each reflecting centuries of refinement and innovation.[1] The introduction of chili peppers from South America around the end of the 17th century transformed Sichuan cooking, and by the 19th century, Sichuan cuisine had become a unique local flavor enjoying equal reputation with other major Chinese culinary traditions.[1] This historical turning point created what is now considered the modern Sichuan cuisine that Ruiji Sichuan Cuisine celebrates and serves to its patrons.
The cooking techniques employed in authentic Sichuan cuisine are as important as the ingredients themselves. Traditional methods include sautéing, stir-frying, dry-braising, and specialized techniques like Pao (soaking in water) and Hui (frying then braising with corn flour sauce).[1] These time-honored approaches ensure that each dish delivers the complex layering of flavors that Sichuan cuisine is renowned for. Iconic dishes such as twice-cooked pork, spicy diced chicken with peanuts, and the famous Mapo Doufu represent the pinnacle of Sichuan culinary artistry.[1]
Sichuan peppercorn, or Huajiao as it is known in Chinese, serves as a cornerstone ingredient in nearly every Sichuan dish.[5] This spice, with its ancient history dating back to the Qin Dynasty when it was valued for its medicinal properties, has evolved into an essential culinary staple that defines the cuisine’s character.[5] The numbing sensation it produces, combined with the heat from chili peppers, creates an addictive and therapeutic dining experience that has made Sichuan cuisine increasingly popular across the globe.
Ruiji Sichuan Cuisine invites the Lomita community and surrounding areas to experience this remarkable culinary tradition. Whether you are a longtime enthusiast of Sichuan food or a curious newcomer eager to explore bold, authentic flavors, Ruiji offers an exceptional dining destination where history, tradition, and contemporary hospitality converge on every plate.

Everything we ordered was absolutely delicious. We had the toothpick lamb, spicy shrimp, steamed buns, and wontons—each dish was full of flavor and cooked perfectly. The food tastes very authentic, and you can really tell the quality is there. We also tried the fried sticky rice with brown sugar, which was such a great sweet finish to the meal. Highly recommend this spot if you’re looking for authentic Chinese/Sichuan food!

Delicious food with a great selection for everyone, both spicy and non. Service and atmosphere are both great, and parking isn’t too bad. Highly recommend for vegetarians too, since their vegetable and tofu dishes are amazing!

The best Sichuan food in Southbay ! The food is authentic and tastes like I am eating in China. My favorite dishes are Toothpick Lamb and Water-billed Beef in Hot Chili Oil. The Sichuan Duck glazed with brown sugar sauce and Shrimp in Garlic Sauce are my daughter’s favorite. I highly recommend this restaurant whom would enjoy the real Chinese food.

I just walked in for dinner and ordered mapo tofu and steamed fish in spicy stew. Both are your typical Sichuan dishes as you know. Both were authentic and super flavorful. I will try other dishes next time such as their lamb and pork belly dishes. Even the tea served was very good. Service is good as well. There is plenty of free parking in the strip mall.

Plenty of parking, nice and clean, and good service. The cold spicy chicken is very good. The sauce is slightly sweet and salty, and it's got quite a kick for spiciness. The chicken is not tender but also not dry. It's got. Firmness to it. It's very good for its price of $11. The toothpick lamb kind of has a bold, bitter flavor to it that I'm not quite used to. The pieces of lamb are crispy, but it's kind of more cooked than I expected, as it's slightly dry inside instead of juicy. I like the little toothpicks in the pieces. The portion is very large to share. I'm interested in trying the cumin lamb next time.
